I have gone into the archiving settings on two different test lists that I set up and told them both to do archiving.

If she only knows the list moderator password, she can only use the admindb interface for moderation, she can't use the admin interface.
I followed the setup instructions for getting the archiving to work but I think I must have missed something.

Are the permissions = 02775 and group = 'mailman' on the archives/private/listname.mbox/ directories?To prevent a periodic digest, remove the senddigests entry from mailman's crontab.
